Vegan Oatmeal Raisin Cookies

For the past month I've been trying really hard to cut down on animal products, and refined sugars. It's been hard.. I love cheese and I can get a pretty bad sweet tooth. (Sour gummies are my weakness).
Although, I have found some great ice-cream alternatives that are pretty delicious.

With Gwenyth Paltrow's third cookbook just being released, I've been looking back at all her yummy healthy recipes from her other cookbooks. This oatmeal raisin cookie recipe is from her second cookbook, My Father's Daughter, but I tweaked the recipe a little bit and added more ingredients. 
These cookies turned out super soft with just the perfect amount of sweetness. Perfect for satisfying that sweet tooth! 
These would also be great for a on-the-go breakfast alternative.

1/2 cup raisins
3/4 cup toasted walnuts
1 cup whole rolled oats
1/2 cup white spelt flour
3/4 cup whole spelt flour
1 1/2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon fine sea salt
1 tablespoon chia seeds
1/3 cup vegetable oil
1/3 cup real maple syrup
1/3 cup brown rice syrup
2 teaspoons vanilla extract (how to make your own, here)
1 ripe banana

1. Preheat oven to 350 degrees. Line baking sheets with parchment paper.
2. Place raisins in a small bowl and cover with water to plump them.
3. Meanwhile, finely grind the walnuts and 1/2 cup of the oats in a small food processor. Combine this mixture with the remaining dry ingredients in a large mixing bowl.
4. Mix together wet ingredients and the banana in a small bowl and add to the grey-ingredients bowl. Stir to combine.
5. Drain the raisins and fold them into the batter.
6. Drop the mixture by large spoonfuls onto the baking sheets. Bake for 11-13 minutes or until browned. Remove, and place on a cooling rack.

What is your favorite face mask for cleaning out pores?

I use ROC's Retinol Correction Deep Wrinkle night cream. I love retinol, and think it's a really important component to any skin care routine. (It's been show to increase collagen production, help fade discolorations, builds elastin, and helps with acne.) You can purchase it here

What's that light up face mask that I see you use on your Snapchat?

What are some cheaper maxi dress options for this summer?
I am loving this burgundy one with a plunge neckline.. This one has less plunge, a print, and long sleeves.. This beautiful light grey one... This print one with another low plunge, comes in black and white.. This is a simple one by Alternative with a side knot... This one is simple in the front with a cute back.. And lastly this one from Nasty Gal. All of these are under $50!

What curling iron do you use on your hair to make your waves?
I use this curling wand by Sulta, from Nordstroms in a 1 inch barrel. But, I actually want to get the 1.5 barrel for a little bit looser curls. I love it, it heats up really quick, and cools off really quick too. It comes with a glove to prevent burning yourself, I don't use it and I have the burns on my hand to show for it, and an iron mat to rest it on and to roll it up in to store.

Anti-Inflammatory Wellness Shot

I've been sooooooo sick for almost two weeks now! It won't go away! Its like the annoying sore throat and raspy voice. I sound like I've smoked a carton of cigs a day for the last 20 years. Not attractive. Haha!
I've been popping Echinacea, Zinc, and Vitamin C like crazy.. and I still have it. 

I was watching Geri Hirsch's Snapchat the other day, and saw that she made this amazing wellness shot with ginger and turmeric. I tried it out and it gave me some energy and made me feel better.

Here's the recipe below..

1 cup coconut water
1 inch piece turmeric
1/2 inch piece ginger (I did more because I LOVE ginger)
Juice from 1/2 lemon
1/4 teaspoon sea salt
1 tablespoon honey

1. Place all ingredients in a high powered blender. Blend, strain, and shoot! 
(I used my juicer because it seemed much easier than straining but either way works just fine)
