Vegan Oatmeal Raisin Cookies

For the past month I've been trying really hard to cut down on animal products, and refined sugars. It's been hard.. I love cheese and I can get a pretty bad sweet tooth. (Sour gummies are my weakness).
Although, I have found some great ice-cream alternatives that are pretty delicious.

With Gwenyth Paltrow's third cookbook just being released, I've been looking back at all her yummy healthy recipes from her other cookbooks. This oatmeal raisin cookie recipe is from her second cookbook, My Father's Daughter, but I tweaked the recipe a little bit and added more ingredients. 
These cookies turned out super soft with just the perfect amount of sweetness. Perfect for satisfying that sweet tooth! 
These would also be great for a on-the-go breakfast alternative.

1/2 cup raisins
3/4 cup toasted walnuts
1 cup whole rolled oats
1/2 cup white spelt flour
3/4 cup whole spelt flour
1 1/2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon fine sea salt
1 tablespoon chia seeds
1/3 cup vegetable oil
1/3 cup real maple syrup
1/3 cup brown rice syrup
2 teaspoons vanilla extract (how to make your own, here)
1 ripe banana

1. Preheat oven to 350 degrees. Line baking sheets with parchment paper.
2. Place raisins in a small bowl and cover with water to plump them.
3. Meanwhile, finely grind the walnuts and 1/2 cup of the oats in a small food processor. Combine this mixture with the remaining dry ingredients in a large mixing bowl.
4. Mix together wet ingredients and the banana in a small bowl and add to the grey-ingredients bowl. Stir to combine.
5. Drain the raisins and fold them into the batter.
6. Drop the mixture by large spoonfuls onto the baking sheets. Bake for 11-13 minutes or until browned. Remove, and place on a cooling rack.
