Happy Easter!
These coconut macaroon Easter egg nests, are very easy to make, and taste incredible!!!
You can't go wrong with coconut, tons of butter, and Nutella!
Plus, I look forward to the mini Cadbury eggs every year.. So addicting.
Ingredients
1/2 cup butter
3/4 cup sugar
1/8 teaspoon salt
3 eggs
6 cups shredded coconut
1/4 cup Nutella
45 Cadbury mini eggs
Directions
1. Preheat oven to 350 degrees.
2. Using an electric mixer, beat butter, sugar and salt.
3. Add eggs, one at a time, until mixed thoroughly.
4. Mix in coconut.
5. Use a medium size cookie scooper, and drop batter onto a cookie sheet lined with parchment paper (6 balls to a cookie sheet).
6. Make an indent with fingers, in the middle of the ball, to resemble a bird's nest.
7. Bake for 20 minutes or until golden brown on the bottom, and browned in spots on top.
8. Once cooled, spoon Nutella into each nest, and top with 3 eggs.
